Have you heard of quinoa? Neither had I until a few months ago. It's a grain, from Spain. Ready for a healthy but yummy dish?
2 cups water
2 teaspoons chicken bouillon granules
1 cup Quinoa (I get the organic Bob's Red Mill whole-grain quinoa from Costco)
Bring the water and chicken bouillon granules to boil. Add quinoa, cover with lid and then lower heat to a simmer. Cook about 15 minutes OR until all the liquid is absorbed & if it absorbs super fast like it did to me the first time just add more HOT water until it looks like the above photos. Fluff the quinoa and allow to set for about 15 minutes.
To the cooked quinoa add:
1 cup chopped parsley
1/2 cup sweet onion, chopped
1 clove garlic, minced
Juice of 1 lemon
1/4 cup extra virgin olive oil
Chopped green onion for garnish
Toss together all ingredients. Chill for 1 hour or over night.
